Molasses or cane juice, column or pot still
Mauritian rum comes in two general styles. Most of it is distilled from molasses in a column still, giving a lighter spirit which can be left white and charcoal-filtered, or aged in oak for something a bit darker. A few producers make rhum agricole instead from pure sugar cane rather than the aforementioned molasses. It's a much slower process, and it leaves a grassier, more vegetal character before it makes its way into a cask.
Dark, spiced and flavoured styles
Aged Mauritian rum often spends time in casks that previously held bourbon, Cognac or sherry, picking up sweetness and spice alongside the cane or molasses. Spiced versions are available here, of course, alongside flavoured bottlings but opt for the unaged white rum for a simple tonic if you want the sugar cane to speak clearly.
