Welsh Whisky

Welsh whisky, a burgeoning segment within the whisky world, represents a revival of a centuries-old tradition in Wales. While the history of whisky production in Wales dates back to the Middle Ages, the industry had all but disappeared by the late 19th century. However, the late 20th and early 21st centuries have seen a renaissance in Welsh whisky, marked by a commitment to quality and a distinct regional character.

The modern era of Welsh whisky began with the establishment of the Penderyn Distillery in the early 2000s, located in the Brecon Beacons National Park. Penderyn, the first distillery in Wales for over a century, played a pivotal role in reigniting the Welsh whisky tradition. Utilising pure Welsh spring water and a unique distillation process, Penderyn has put Welsh whisky back on the map, gaining international recognition for its quality.

Welsh whiskies, including those produced by Penderyn, are known for their smoothness and complexity. The distillation process often involves the use of a unique Faraday still, which allows for a single continuous distillation process. This method contributes to the creation of a spirit that is refined and flavourful, with a character distinct from its Scottish and Irish counterparts.

The flavour profile of Welsh whisky often includes notes of fruit, vanilla, and spice, with a smooth and well-rounded finish. The use of different types of cask finishing, such as Madeira, bourbon, sherry, and port casks, imparts additional layers of flavour and complexity to the whisky. This approach to cask finishing reflects a blend of traditional and modern techniques, showcasing the versatility and innovation in the Welsh whisky industry.

In addition to Penderyn, the Welsh whisky landscape has seen the emergence of other distilleries, each contributing to the diversity of the category. These distilleries often emphasise small-batch production, artisanal methods, and a deep connection to the local environment and culture.
