Vittorio Capovilla started his distillery, Distillati Capovilla, in 1986 in Rosà, Italy. He was a mechanic and made racing cars. Then, he turned to making spirits. His goal was perfection. This made his distillery famous worldwide.
The distillery is unique because it pays a lot of attention to how it makes spirits. They choose the best fruits, some very rare, from local areas and sometimes from far away. This ensures top quality. They use a natural fermentation process without additives or special yeasts. This keeps the true fruit flavours.
For distilling, they use a special still made by Vittorio. It works at low temperatures to keep the delicate flavours of the fruits. After distillation, the spirits are not bottled immediately. They mature first, often in glass, not wood. This makes the flavours clear and pure.
Distillati Capovilla makes various spirits, including grappa from different grapes. Each grappa shows the unique character of the grape and its origin. The distillery is especially good at making fruit distillates. They use fruits like pears, apricots, quince, and rowanberry. These spirits taste like the fresh fruit itself.
