Italy's Distillati Capovilla has made use of organic local Williams pears for this eau de vie. The fruit first goes through a spontaneous fermentation with indigenous yeasts before distillation in a bain-marie. The distillate is left to rest in steel tanks before bottling, complete with colour-coded wax sealed bottles to reflect the fruit within!
Juicy, ripe pear sweetness, with pear blossom and other ripe orchard fruit.
