Another fruity eau de vie from Capovilla, Ciliegie Duroni makes use of organic black cherries sourced from the hillside vineyards. The cherries are first fermented with indigenous yeasts before the fruit wine is slowly distilled in a bain-marie. The distillate is then left to rest in steel tanks for two years before it's then blended with local spring water and bottled at 41% ABV. Should make a rather delicious digestif alongside rich chocolate desserts, we reckon.
