The grapes are left to overripe on the vine, and after harvesting, they are spread out in the sun to concentrate their sugars. The process results in a sweet, concentrated must, which is then fermented and aged in oak barrels. The ageing process can vary from a few years to decades, imparting rich and complex flavours to the wine.

Flavour Profile and Characteristics

Commandaria is renowned for its deep amber colour, full-bodied texture, and a rich palate brimming with flavours of dried fruits, spices, and nuts. Notes of figs, raisins, and dates are common, along with hints of cinnamon, clove, and other warm spices. The sweetness is balanced by a vibrant acidity, ensuring that the wine is not cloying but rather lush and satisfying.

Other Sweet Wines of Cyprus

While Commandaria is the most famous sweet wine of Cyprus, the island produces other sweet wines that are equally worth exploring. Many of these wines are made from indigenous grape varieties, offering a unique taste of the Cypriot terroir.

Muscat of AlexandriaThis grape variety thrives in the Cypriot soil and climate, producing sweet wines with intense aromas of citrus, peach, and floral notes. The wines are light and refreshing, with a sweetness that is balanced by crisp acidity.


Traditionally used for red table wines, Maratheftiko is also used to make sweet red wines. These wines are rich and velvety, with flavours of red berries, plums, and a hint of spice.
