Kilchoman - Batch 1 Bottling Note

Batch 1 of single malt Scotch whisky from the new kid on the Islay block, Kilchoman, bottled by That Boutique-y Whisky Company. But what’s this? It seems that the new kid is schooling us on barley production, dropping science with diagrams on that chalkboard about what goes into their whiskies.

You see, Kilchoman is a farm distillery that grows 30% of the grain used in their whisky. But you can’t just roll up to a field with a bag of random seeds, start throwing them around and expect a good harvest. You need to know what’s good. You need to know what’s going to survive the Scottish weather. You need science, and Kilchoman have that all wrapped up.

Kilchoman originally used optic barley, but like all scientists, they improved on their hypothesis and now use publican barley, which stands strong in the face of the wild winds of Islay. Yeah Kilchoman! Yeah science!

Batch 1 is a limited release of 272 numbered bottles.

‘That Boutique-y Whisky Company’ bottles single malts, single grains, bourbons, blended malts and blends from a variety of renowned distilleries. These whiskies are adorned with cultish graphic-novel-style labels.

Tasting Note by The Chaps at Master of Malt

Nose: Barley, honey, peat. A real golden dram. Beautifully balanced, it becomes more buttery, with both lemon sherbets and gummy bears as well as perfectly seasoned popcorn. Dried apricot and rosemary roast potatoes develop whilst water unlocks a little more maritime seaweed.

Palate: Super sweet, warm barley with vanilla and crème brûlée. Peat is ever-present without taking over.

Finish: Less buttery but popcorn is there again alongside more golden barley. Subtle peat lingers with just a hint of freshly ground black pepper.

Overall: This is a cracking little independent Kilchoman. A golden, peaty treat!
