
There's still Diamond stills to explore for That Boutique-y Rum Company! After bottling up rum from the Versailles Still and the Port Mourant Still (plus a mystery still) that all call Guyana's Diamond Distillery home, they've gone and got their hands on a 12 year old Diamond rum produced using the Savalle Still! This four column French Savalle Still was originally installed at the Uitvlugt Distillery, but eventually made its way to Diamond and has been busy ever since.
Batch 1 is a release of 406 bottles.
Maple syrup on pancakes, subtle oaky warmth, banana and pineapple notes develop later on, along with a floral sugar cane note.
Toasted brown sugar, nutmeg and a soft hint of tobacco, followed by fragrant citrus and vanilla pod. Very light whiff of smoke somewhere in there, too.
It's all caramel, cinnamon and orange on the finish.
