Venus La Universal Dido 2021
The Venus La Universal winery in Spain wanted to showcase the grenache grape in this 2021 vintage Dido bottling. It is is made with 60% grenache, along with 20% syrah, and the rest made up of smaller proportions of carignan, merlot, and cabernet sauvignon. 60% of the wine was aged for 16 months in large French oak casks, which the rest was rested in concrete tanks to let the fruit character shine. It's bright, fruity, and subtly mineral – we've heard it goes rather well with duck!
