Decidedly upmarket Cava from Vallformosa, a Barcelona-based producer with over 150 years of winemaking experience. This is a blend of equal parts of the three classic Cava varieties, Macabeo, Parellada, and Xarel·lo, with 25% Chardonnay added for a bit of the old je ne sais quoi. This is a bone dry Champagne rival at an everyday price.
