Shaw & Smith was founded in 1989 by Michael Hill Smith (from the family that owns Yalumba) and and his cousin Martin Shaw. It's based in Adelaide Hills in South Australia and consistently produces some of the country's best wines including elegant chardonnays like this one. This was fermented in a mixture of old and new oak casks before ageing in cask for around nine months. It's a full-bodied but extremely fresh wine which would be excellent with richer fish dishes.
