This is one of the more upmarket chardonnays from McHenry Hohnen in Margaret River, Western Australia. It's a blend of four vineyards: Calgardup Brook, Hazel’s, Burnside and Chapman Brook. The fruit is fermented in a mixture of new and old French oak barrels with wild yeast fermentation before ageing for around 10 months in the wood. With some time in bottle this has developed flavours of hazelnut and toast. It would be superb with some very nice fish simply fried in butter with a squeeze of lemon.

Limes, lemon rind, ripe peaches and a little pineapple, fresh acidity, with a full creamy texture and notes of buttered toast and hazelnut. Very long.
