The giant Boutari company was instrumental in the transformation of the Greek wine industry in the '80s and '90s from a bit of a joke, to the country which produces some of the most exciting wines on the planet. It makes everything from crisp zingy whites, expensive reds and excellent roses like this one. This is made from a blend of xinomavro, syrah, cabernet sauvignon, and merlot to create a heady, full-flavoured pink that's very different from the Provencal norm. Try this with squid cooked on the BBQ or, naturally, Greek salad.
