This is a recreation of the sort of sherry that was popular in the 18th and 19th centuries in which the wines were transported by ship through the tropics meaning that the sherry would age in extreme climates. It's made from a blend of old oloroso and sweet PX sherries with an average age of 12 years which are blended and then married together for a further three years in cask. The result is a sweet, toffe-laden nutty sherry that would be superb with cheeses like Stilton or a mature piece of cheddar.

Burnt toffee, walnuts, and molasses with fresher citrus and orange peel notes. Very very long and complex.
