A rather excellent Palo Cortado sherry here from the immensely talented Gonzalez Byass. Aged for 12 years, this one has developed a full-bodied flavour profile rich in nutty elements. Always a treat to get your hands on well-aged Palo Cortado, with its slightly mysterious origins, and the Gonzalez Byass team has done an incredible job here.
Almond flakes atop Cherry Bakewells, soft hints of brown sugar, dusty oak introducing some drying spices later.

Thought I would treat myself to a sherry with a bit of age under its belt for a change. Wasn't disappointed, complex and totally different to a standard like Croft or similar. Dry, oaky and something to get your tastebuds around.
My favourite sherry, and one to convert those who think they don't like sherry! Rich in flavour but in no way cloying, the perfect balance.
