The founders, with backgrounds in fermentation science, bring an expert understanding of the minutiae of fermentation and maturation. Bourbon: Their bourbons are known for their sweet mash process, as opposed to the more commonly used sour mash. This method, although more challenging, results in a cleaner and crisper flavour. Using a mix of corn, wheat, or rye, and malted barley, these bourbons are aged in charred new oak barrels, imparting rich caramel and vanilla notes.

Bottled-in-Bond: Adhering to the Bottled-in-Bond Act of 1897, Wilderness Trail's bottled-in-bond whiskeys guarantee a product that is the outcome of one distillation season, aged for at least four years, and bottled at 100 proof. It's a testament to their commitment to authenticity and quality.
