There’s so much more to American whiskey than bourbon and rye, as Westland Distillery proves. The brand is one of the leading producers of American single malt whiskey, utilising a craft beer approach to make whiskey from a huge variety of malts, including chocolate and Munich malts. A brewer’s yeast is also used and all the barley comes from the US. Distillation takes place in two pot stills and classic American oak is the most popular cask choice, but there’s plenty of experimentation taking place at Westland. The distillery also benefits from the famously wet Pacific Northwest climate in its home in Seattle, which means the whiskeys mature much slower than in the heat of Kentucky, America’s whiskey heartland, to produce a more elegant style.
