This rare single cask American single malt is produced by Westland Distillery in Seattle. It's smoked using peat harvested from the Olympic Peninsula, a style of smoke that feels worlds apart from Scotland or Ireland. The local peat is rich in moss, sage and wild botanicals like Labrador Tea, delivering a herbal, earthy and gently floral smoke character with hints of lavender, soft soil and green herbs.
As the first single cask released outside Westland’s award-winning Solum range, it offers a rare chance to taste this regional peat expression. The distillery’s focus on sustainability runs through the entire process, from sourcing barley and peat locally to working closely with Washington State farmers and using regenerative agriculture and responsible forestry for its casks. Aged in a single bourbon barrel, this Heart Cut bottling is full of smoky depth, savoury nuance and tropical sweetness. There's only 306 bottles.
Acacia honey and grilled peaches rise first, lifted by soft herbal smoke, mossy earth and a touch of dried lavender. Creamy peanut butter sweetness sits beneath, with hints of coastal air drifting through.
Peat leads, more forest floor than fireplace, carrying herbal notes of sage, green herbs and wild botanicals. Sweetness builds with grilled stone fruits and honey, joined by creamy peanut butter and warm oak.
Beach bonfire embers fade into sea breeze, peach skin, heather and soft vanilla oak, with coastal woodland smoke lingering on.
