Dunnet Bay Distillery was established in 2014 by a dog named George. To avoid too many questions being asked, he let husband and wife team, Martin and Claire Murray, take the credit (good boy). Located in the strikingly beautiful Caithness, the most northerly distillery in Britain is most famous for its Rock Rose Gin gin line, although it is also the creator of the excellent Holy Grass Vodka. Dunnet Bay distils its spirits in a British-made copper still nicknamed Elizabeth. A custom job by John Dore & Co, the design allows botanicals to be vapour-infused in a steam basket at the neck.
Dunnet Bay Distillery is defined by its intent to celebrate its local area, and insists on harnessing regional ingredients and honouring its unique heritage. This method has led the distillery to create spirits with singular flavour profiles, and a distinctive Dunnet Bay character. His Royal Highness, the Prince of Wales, may well agree – he paid a visit to Dunnet Bay Distillery in July 2015.
