Firmin Dezat now runs Domaine Thibault. He follows his father, André Dezat. André has been important in promoting Sancerre wines since 1948. He expanded the family estate. Now, it has 23 hectares of vineyards in Pouilly Fumé, Sancerre, and Menetou-Salon. 8 hectares are for Pouilly-Fumé.

The vineyards grow Sauvignon Blanc, Fumé Blanc, Sauvignon Musqué, and Pinot Gris. The land in Pouilly-Fumé has Kimmeridge marl, limestone, and flint. This adds minerality to the wines. The cooler soils allow the grapes to ripen later. This makes the wines rounder and fuller. They can age well. It is best to drink these wines within five years.

The winery is known for its Pouilly-Fumé wines. The winemaking includes thermo-regulated vinification of selected grapes. Then, they age in stainless steel. This keeps the wine fresh. The young Pouilly-Fumé has a vibrant taste. It has aromas of blackcurrants, lemon peel, grapefruit, and green apple. It also has asparagus, zesty acids, a hint of grassiness, and a smoky undertone. The finish is elegant.

Domaine Thibault's wines are good as an aperitif or with various dishes. They go well with sushi, sashimi, green asparagus, tuna tartare, scallop carpaccio, and goat cheese like Crottin de Chavignol or Valençay.
