Lyme Bay Winery's Classic Cuvée is built upon a combination of mostly Pinot Noir grapes, alongside a portion of Chardonnay. Around a third of it was fermented in oak, with the rest in stainless steel. It spent at least 30 months on its lees, allowing plenty of time for its flavour profile to develop.
