French red wine from Touraine in the Loire, it's the 2023 vintage of Guy Allion's Les Parcs Pinot Noir. The grapes grow in clay and limestone-rich soil in south-west sloping vineyards, and the wine is rested in oak for an average of nine to 11 months before bottling. The result is an elegantly fruity, velvety sipper – a fab accompaniment to baked cheese.
