Another wonderful vintage of Chapel Down's gorgeous Three Graces. The sparkling wine is made from a blend of Chardonnay, Pinot Noir, and Pinot Meunier, and it's matured on its lees in a tank for six months before bottling, and then at least another three years on lees in the bottle. Subtly buttery and fruity, and the folks from the Sussex winery suggest pairing it with grilled fish.
Touches of buttery pastry, with a smidge of raspberry coulis and pear skin.
