The team at Woven has taken English whisky’s emerging brilliance and run with it, straight into uncharted territory. Pastures New marks a genuine first: a blended English whisky, pulled together in a London studio below a cocktail bar. If that doesn’t sum up the modern English spirit, nothing does.
This blend brings together the lively creativity of Adnams, White Peak, Copper Rivet, Cooper King, Fielden, and Cotswolds – each distillery doing its own thing with grains, casks, and a glorious disregard for tradition. After 75 days of marriage in a hogshead, the result is vibrant, layered, and confident – the sort of whisky that says, "We’re not Scotland, we’re not trying to be, and we’re bloody proud of it."
A total of 714 bottles were produced at 49.1% ABV.
Fresh orchard fruits leap out first – crunchy apples and just-ripe pears – backed by vanilla shortbread, orange zest, and a hint of sandalwood. A subtle thread of toasted rye runs underneath, like a warm countryside breeze.
Toffee apples and honey-drizzled porridge give way to a pleasing rye crackle, while notes of marmalade, marzipan, and stewed plums bubble up. A smart hint of barrel char and dark chocolate keeps things grounded.
Cinnamon, nutmeg, and a touch of salted caramel.
