This is the third and final limited edition of Timorous Beastie’s Cheese Cellar Collection. This latest release from Douglas Laing blends Highland Blended Malt Scotch Whisky (including some Streathearn single malt) finished in Moscatel casks and bottled at 48% without colouring or chill-filtration.
There's just 4,200 bottles of this whisky which brings together the rugged spirit of the Scottish Highlands and the rich elegance of Spain's sun-kissed vineyards. It's crafted to accompany artisan cheeses so do the right thing. The brand says the whisky's sweet, fruity, and floral flavours are a perfect foil to the soft, tangy, and creamy characteristics of goat’s cheese.
A sweet spiciness on the nose gives way to dried fruits, caramel and fresh orange peel.
The thick palate bursts with creamy Malt and cereals alongside tangy marmalade and honey suckle.
The sweet finish lingers on – anticipate orange blossom, a hint of spice and apricot.
