This indie Strathmill bottling was distilled in September 2007, and left to mature for the next decade or so in a pair of hogsheads. When July 2019 came around, Signatory bottled the 11 year old Highlander at 43% ABV.
Straw aromas, buttery cinnamon pastry and freshly baked bread, with a drizzle of floral honey.
More of that floral honey, with toasted brioche, apricot tart and fresh hay.
Caramelised pistachio and mint chocolate.
