Starward Nova Bottling Note

An ace Australian single malt from the Starward range, Nova spends its life maturing in casks that previously held Australian red wine, sources from wineries that produce some lovely Shiraz, Pinot Noir and Cabernet. In fact, the casks come right from the wineries, and are only lightly charred or steamed before whisky goes into them, ensuring that the wine's flavour profile has an impact on the spirit. Particularly decadent stuff, it does very well when pairing with rich foods as well as being enjoyed by itself. it's also rather good in cocktails that take advantage of the bold red fruit notes. Perhaps even a Manhattan...?

Nose Positively bursting with red fruit, strawberries with a Port-like mixture of fruit and nuts.

Palate Honey, cinnamon and more red fruit on the palate, creamy nutty texture, luxurious mouthfeel with a touch of tannin.

Finish Toffee with walnuts.

Good effort Aussies
Not a bad dram at all. Fruity with caramel on the nose, the taste on the tongue in a bit straw and dies quite quickly. A nice light dram with a subtle red wine note.

Creamy, red fruits and a hint of dark chocolate. Delicious! I'll be buying another bottle.

A lovely surprise.
Very fruity nose but I'm surprised that no-one has mentioned milk chocolate. I get so much creamy, milk chocolate goodness from this along with the fruit coating the mouth and in the finish. Really lovely and quite different.

Nice - but lacks something
The fruity goodness does come through from the wine casks. I enjoy the tannin, subtle yet noticeable!

It could do with some oomph from a deeper flavour and it leaves the pallet very quickly.

Easy sipper but I don’t feel it’s worth the price tag.

Nose - Dark fruits
Palette - More dark fruits, hint of honey, something toasty
Finish - Longish, warm, more dark fruits, honey and toast? Some spice

Incredibly boring
I don't really write reviews. Mostly because taste is so subjective I don't really know what my experience could really tell you.

Starward Nova however blew me away and not in a good way.

I've been drinking whisky for years. I've visited more distillers than I can remember. I've drank myself through hundreds of bottles and I've yet to find a whisky like Starward Nova.

Nose: You'll be greeted with the slightest hint of fruit. It's tough to work anything out, this whisky smells so bland I thought I'd poured water in my glass.

Taste: On first sip you'll feel this dram thinly and weakly cover your tongue with flavors of...well...not much. It sits lightly at the front and back, and swallows as if you've just taken a breathe of fresh air. There's hardly any redeeming qualities to speak of - the finish runs away faster than a criminal with red hands. I couldn't believe it was gone so quickly. You might find some honey in there, a touch of sweetness, but it's fleeting and forgettable.

This is a whisky for non-whisky drinkers. My wife tried it and even she, an absolute hater of whisky, gave me nothing but "it burns a bit."

Not complex but sippable like your run of the mill Marker's Mark
Frankly, a let down based on price and the hype on red wine barrel aging. I expected to taste more character in the body, but not much found. It's good for cocktails or sipping smooth but don't expect to find anything complex. Fingers crossed it gets better with age... but I'm not holding my breath.

Good Australian
Typical Australian whisky in that it matures more quickly than colder climate whiskies such as Scottish malts.
This can lead to inferior flavours. However Starward Nova seems to have got the maturation right. A very nice whisky. Price? Considering it comes from the other side of the planet, I think the price is not bad.
