Sherry
This was distilled at the Port Ellen distillery on the 16th November 1979. It was then aged for 24 years in sherry butt #6773 before bottling at cask-strength in October 2004. This is a release of just 541 numbered bottles from Signatory's Cask Strength Collection.
Coastal, aromatic nose with hints of lime peel and fresh herbs. Tangy notes of citrus, allspice, soft peat smoke and tar.
Tarry old ropes and beeswax. Hints of lemon curd, honey, allspice and cardamom. Rich oak and a thick plume of oily wood smoke.
Long finish - very complex with hints of salted butter and herbs on the tail.
Beautifully complex and a great example from Port Ellen...
