
Another astronomy-inspired blended malt from North Star Spirits here - this time, they've named an expression after Sirius, the brightest star in the night sky, and sometimes known as the Dog Star because it can bark and fetch sticks of its importance in the Canis Major constellation. The whisky itself is 31 years old, and was drawn from first-fill bourbon casks in 2019. A release of 3582 bottles.
Big waves of charred oak and coffee, with lighter hints of orange oil and heather honey.
Chocolatey at first. Walnut, almond and Brazil nut, all with a hint of smokiness.
Dried cedar, slightly oily, sultana, toffee.

Fantastic nose, nuts, chocolate, dried fruit. Taste is figs and dates, nuts, cocoa, complex and veeery smooth. This gives my higher-end single malts some good competition. A steal when on sale.
