This single malt from North Star Spirits was distilled in 2007 at a super-secret undisclosed distillery on Orkney. It matured in a single refill bourbon hogshead for the next 12 years, until it was bottled at cask strength in 2019 in a release of 370 bottles at 55.5% ABV, as part of the Cask Series 007.
Tasting Note by The Chaps at Master of Malt
Nose
Wonderfully fresh aromas of cut grass and coastal air, a balance of earthy and saline.
Palate
Floral, earthy and delicate chamomile tea with a spoonful of sweet and fragrant honey, and a touch of heather.
Finish
Sweet and creamy banoffee pie, with expertly balanced bonfire smoke.
