This was distilled at Mortlach on the 5th July 1995 before a 17 year maturation in a pair of hogsheads. It was bottled for Signatory's Un-Chillfiltered collection on the 20th November 2012. A release of 752 numbered bottles.
Woody, fruity nose with hints of marmalade and Corinth raisins. Ground almonds and stem ginger. Hints of honey.
Clean, fruity palate entry. Cooked banana, butterscotch, apple peel and allspice.
Spiced, malty finish.
Such an underrated distillery that produces a unique and sophisticated malt. In my opinion this Signatory bottling lacks some of the complexity and peaty tones of the Flaura and Fauna editions, but has more assertive spice and floral qualities. Fantastic dram to have after a bracing hike. Nose: Elegant, floral and proud. Displays notes of blossom and almost sapling freshness. Tiniest hint of honeyed spice. Palate: Strong and muscular, again with a fresh and spring-like cleanliness. Develops tones of apple, barbecued banana, delicate blossom (honeysuckle?), cinnamon and a touch of vanilla sweetness. Finish: Medium-length, nicely balanced with spiciness coming to the fore, but still very clean and fresh. Would not recommend adding water - mutes those delicate and very enjoyable floral tones.
