Signatory's 100 Proof Edition series honours the old-school proofing system with a collection of whiskies bottled at a hearty 57.1% ABV. This one hails from Glentauchers, distilled in 2012, it spent 11 years maturing in a selection of first-fill oloroso sherry butts.
Juicy, ripe pears and apples drizzled with honey join buttery oak and delicate notes of vanilla.
Those juicy fruits carry through with a dusting of sweet spice. Honey and cinder toffee sweetness balances peppery oaken warmth.
The orchard fruits linger to the end, with a sprinkling of cinnamon, sweet malt and caramel.
