13 year old Fettercairn, distilled back in November 2006, matured in a pair of bourbon barrels and set aside to slumber. A baker's dozen years later, Signatory cracked open those bourbon barrels and bottled up the whisky within in April 2020. Good job, team!
Nose: Clotted cream, chocolate digestive, a hint of strawberry hiding in there too.
Palate: Soft fruitcake and vanilla tablet sweetness, plus spicy clove and a very subtle rubbery note.
Finish: Basil, melted butter and apple.

I have to admit I've become an avid fan of the signatory indy bottlings. This particular offering is very enjoyable. Bizarrely a completely different creature from its core range. Being aged for simply a year longer than the 12 I was expecting some similarities. But this is just testament to the skills of signatories ability to select truly fantastic barrels. Very delicate on the nose with orange blossom and thick fresh cream. There's a tease of tropical fruit, green mango, papaya, lychee. The palate offers herbaceous savoury notes then a flourish of soft Heather and finishing on fruits. The finish lingers slightly with a hint of mint. The abv of 43% doesn't detract from the overall experience. Get one before they're gone.M Horrell
