The very first whisky from the Dornoch Distillery! A highly-anticipated release from Philip and Simon Thompson and the Dornoch team, made with organic plumage archer barley and brewers yeast, and it was matured in a first-fill ex-Oloroso butt cask for 3 years. There's a definite focus of flavour when it comes to Dornoch (if you've tried the gins Dornoch has been releasing while its whisky matures, you know what we're talking about), so we're expecting big, delicious things to come from its whisky - and this is just the start! 893 bottles were produced.
Toffee apples, chocolate raisins, a subtle whiff of flint, melted butter and gingerbread.
Toasted brown sugar, fresh barley, pine nuts and pecans leading into chocolatey praline, cinnamon bark, a touch of dried fruit.
Hints of forest floor earthiness and blackberries.
