Another indie Speysider from Signatory, this one was distilled at Dailuine in April 2007. It rested in a pair of hogsheads for over a decade, until in December 2019 it was bottled at 12 years old for the Un-Chillfiltered Collection at 46% ABV. Warming and toasty, this one.
Toasted teacake, with apple jam, citrus curd and fresh hay.
Cinnamon biscuits, a pinch of tobacco and green oak, with a hint of underripe apple.
