While the Connacht Whiskey Distillery, located on the west coast of Ireland, was waiting for its own spirit to mature (which it now has, and you can find it here), it sourced this delightful grain Irish whiskey. The mash bill is made up of 93% corn and 7% malted barley and, interestingly, after 4 years of maturation, it was transferred to sweet red tawny Port casks for a period of 6 months to add a new depth of flavour and some rich colour.

Nose Floral notes breeze through sweet melon and vanilla.
Palate Brown sugar and a little espresso with dark fruits in support.
Finish Spicy, with a little grain sweetness tempering it.
