Producer's Tasting Note:
Nose: Both large and deep. Citrus fruit zest, heady florals (lilac, violet) and dried fruit (apricot, date) give the aromatic palette huge volume. Fine spices (cardamom, clove), dark chocolate and peppermint make it last forever. Malted barley acts as the pivotal point for the nose as a whole.
Palate: Clear, lively. The attack on the palate is straight-forward and gets straight to the point. It creates a deep furrow in liquoricey, damp soil and chocolatey peat. The salted, malty mid-palate creates a clear transition. It lingers with notes of salted butter caramel and orange zest. The end of the palate is mineral (tawny sands) and roasted (coffee, tobacco).
Finish: Long, indulgent. Beeswax and strong spices (black pepper, clove) create a combination of flavours full of energy and sweetness. Once aerated, the finish transforms into quince jelly and heather honey. The retro-nasal olfaction is saffron-scented, delicately woody and toasted (walnut, almond). The voluptuous empty glass evokes a traditional green chartreuse liqueur.
