Back on 28 September 2007 this Caol Ila single malt was distilled. It was then aged for 16 years in a single first-fill oloroso sherry butt (cask 5) before Signatory filled 661 bottles at a cask strength of 58.5% ABV on 8 November 2023 for the Cask Strength Collection.
Peat, toffee, rhubarb crumble, orange zest, seaweed.
Caramel, cherries, nutmeg, smoke, and rosemary.
Smoky and spicy.
