Sherry
A terrific single malt from Caol Ila, distilled in 2007 and matured for 15 years, with two of those years spent finishing in a first-fill oloroso sherry butt. The smoky, Islay Scotch whisky was bottled by indie bottlers Signatory Vintage in 2023 for its Cask Strength Collection. An outturn of only 695 bottles.
Smoked streaky bacon, with dried figs, some toasted almonds, vanilla, and spice.
Sherry character bringing a barbecue smoke quality to the coastal peat, with drizzles of caramel, raisin-studded fruit compote, and shavings of chocolate.
Sweet sherry and smoke linger, with some drying oak.
