This 11 year old single cask, Islay single malt from Caol Ila was distilled in November 2010 and initially matured in refill hogsheads, before moving to a fresh sherry butt. After 16 months, when all the fruity sherry character had mingled with the characteristic Caol Ila smoke, it was bottled up at a cask strength of 56.8% in June 2022, with an outturn of 702 bottles. Independently released for Signatory's Cask Strength Collection.
Smoked bacon, bursts of ripe cherries, dried vine fruits, and a hint of damp ashes.
Oily, with drizzles of creamy caramel, raisin-studded fruit compote, cocoa nibs, and plenty of sherry character mingling with BBQ smoke.
Sherry sweetness lingers alongside drying oak, and smouldering embers.

Best peat/sherry combo I've had . Simply excellent .
Tastes like a very tasty Ardbeg Uigeadail. The Sherry comes through perfectly with a lingering flavour of peat.
