Caol Ila 10 Year Old 2016 - The Unchillfiltered Collection (Signatory)
A 10-year-old Caol Ila single malt distilled in 2016 and finished in a combination of first-fill and second-fill sherry butts. Signatory Vintage bottled the whisky at 46% ABV in 2026 for the Un-Chillfiltered Collection, without chill filtration or added colour. The sherry casks add dried fruit, nuts, and dark chocolate without smothering Caol Ila’s clean coastal smoke, citrus, and salty character.

Nose
Lemon peel, sea spray, dried fruit, toasted nuts, and clean peat smoke.
Palate
Raisins, dark chocolate, citrus oil, roasted almond, sea salt, and ashy smoke.
Finish
Sherry, pepper, salt, and lingering pea
