Apogee XII from the Bimber team in London is created using a blend of single malts from Speyside and the Highlands, aged for at least 12 years. After blending, the whisky was given an extra rest in ex-bourbon casks that had also previously been used to mature Bimber's very own single malt whisky. An intriguing release from Bimber, a distillery that has been plenty busy impressing us with its fab range of spirits (particularly those aforementioned whiskies).
Nutmeg, honeycomb, brown sugar, soft oak, cooked orchard fruits.
Peaches in syrup, crushed peppercorns, menthol, a hint of warming cedar.
Crunchy pear and a smidge of lemon, with layers of caramel.

Just a simple blend. Nice nose, malty, bitter, ash. Short finish. Fairly expensive for what it delivers and riding on the coat tails of single malts from the distillery. If matured in Bimber casks is the main selling point, you know this is mostly marketing nonsense.
First tasted this at the at the Bimber distillery before it had a name as a sample and loved it then but only recently picked up a bottle of the eventual release.This is a superbly balanced mix of Speyside and Highland malts with a sprinkling of magic from the Ex Bimber casks final finishing that delivers bundles of baked orchard fruits coated with butterscotch and elegant hints of the inside of a Cuban cigar box and toasted waffles.A very Moreish offering this.
