A lovely Lowland single malt from Auchentoshan distilled back in February 2000 and matured for 21 years in a bourbon barrel. This single cask was bottled independently in April 2021 by Signatory as part of its Cask Strength Collection, with an outturn of just 163 bottles.

Nose
Crumbly vanilla fudge, lemon sorbet, and freshly mown grass.
Palate
Creamy barley with oaky vanilla, fruit and nut chocolate, dried apricot with herbaceous undertones.
Finish
Toasted oak, baking spice, orange peels, and floral honey.
