Sherried Macallan is nothing new, but The Macallan TIME : SPACE Sherry Cask takes the maturation process where none of its whisky has gone before.
The Macallan Time Space Sherry Cask
This is the first release influenced by casks seasoned with its own Valdespino sherry, following The Macallan becoming a co-owner of the vineyards in Jerez. For a distillery whose whisky owes so much to sherry-seasoned oak, it's a fascinating development, one that's sure to intrigue fans of the distillery.
In 2024, The Macallan marked its 200th birthday by filling its first 200 casks seasoned with Valdespino sherry. Most will be left to mature whisky for decades yet. A small number were selected for this release. The whisky had already spent at least 20 years in bespoke sherry-seasoned casks before its further rest in the Valdespino-seasoned oak.
Tasting Notes
Nose:
Sultanas, dates and dried apricot, with rich ginger cake and treacle toffee.
Palate:
Bramble jam and chocolate-coated cherries, layered with dried fruit and warming cloves and cinnamon.
Finish:
Cocoa nibs, polished oak and lingering warming spice.
