Description

Rich, velvety Pedro Ximénez sherry from historic Jerez producer Valdespino. The grapes spend at least two weeks drying in the sun to concentrate their sugars before pressing, fermentation and fortification. Ageing takes place oxidatively in an American oak solera system, with the finished wine averaging ten years old. Lovely alongside pudding, or poured over vanilla ice cream.

Nose

Concentrated raisins and dried figs, with dark chocolate and roasted coffee.

Palate

Rich, velvety dried fruit sweetness, bringing raisins and figs together with deeper cocoa and coffee notes.

Finish

Dried fruit and a gently bittersweet chocolate note.
