
Gonzalez Byass Matusalem is aged for more than thirty years and sweetened with the addition of a little Pedro Ximinez. This creates an intensely rich Oloroso.
Toffee, walnut, raisins and more dried fruit, slightly oily yet beguiling.
The palate displays all the richness suggested by the nose; lots of dried fruit and PX sweetness, but it's also very structured with a very dry feel through the midpalate.
The oaky dryness continues on the palate for a dry finish.
This really is a very good Oloroso.

On opening the bottle you are surrounded by the aroma of dried fruits, that makes your mouth water. On pouring it is a delightful dark syrupy liquid that defies you to swirl it in the glass it's so thick. The flavour is massed dried fruit especially figs and is a sweet warming experience. It's the after taste that gets you, the beautiful treacle toffee flavours linger for a long time, daring you to have another sip. Amazing!
