A rather special limited edition sake from Île Four, Junmai Daiginjo is made with Yamadanishiki rice, with a high polishing rate of over 50%, for a cleaner flavour profile. It goes through a lengthy fermentation, and the final spirit is full of fresh fruit notes and citrus, perfect for pairing with appetisers!
