St Aubin 10 Year Old – Harvest 2003
A terrific ten year old rum all the way from Mauritius, produced by the St Aubin Distillery. This expression was made from the 2003 sugar cane harvest, and distilled in a copper pot still before being set aside to mature for a decade, allowing plenty of time for its flavour profile to develop. Fascinating stuff, this.

Caramel latte, freshly diced herbs, dried citrus peels, ginger, white pepper, a floral sweetness sticking around for a while.
