
The team from Discarded Spirits specialises is using ingredients that would otherwise go to waste to create lip-smacking spirits, like its Banana Peel Rum! It features a base of Caribbean rum which has been matured in whiskey casks, but then it's infused with banana peels for two weeks to impart a whole load of fruity, estery deliciousness. The banana peels come from a flavour house which uses the fruit, but not the peels, so they would normally not have a use. Discarded Spirits has given those peels a use, and the result is marvellous.

Darn tasty. I like the banana scent of a whisky, and it’s just as delicious in a rum. The rum is used for the Balvenie Caribbean cask seasoning.
