A 70cl bottling of La Diablada Pisco, from the Macchu Pisco range. To craft this rather herbal Pisco, they use Italia, Torontel, Quebranta and Moscatel grape varieties. 'La Diablada' is a reference to a dance that interprets a battle between angels and demons.
Elegant and floral with a touch of herbaceous basil.
Fruit starts to come through clearer on the palate, with fresh grapes and a touch of peach.

My Majorcan helicopter pilot, Col. Daniel Keen (also a new dad this week, congratulations to Dan on the birth of Lyla!) issued me with a gift token. Tactically exposed here, this zesty number tangles with my taste papillae. Boosh, it is victorious again. Now in my backyard, hiding in trenches and drowning in it. Their faces painted with lemon egg white, the pisco sour warriors are sacrificing me at the altar of booze. White flag raised here. Salut to Colonel Dan for he is the true Master.
Wonderful fruitiness - I made a Pisco Sour - using Aquafaba rather than egg - and this was a completely different drink same pufft as the sour takes yo,u but then the flavours come through, fresh on each sip. Flowery with a hint of bitter Seville orange.

This Pisco has a gorgeous fresh grape aroma and works beautifully in a pisco sour.
This is a great liquid, with a freshness and vibrancy to the grape taste which is missing in cheaper piscos (think ABA). Amazing on its own, but also stands up very well in cocktails. Great packaging too!!
